Pan Asian: Eggplant Curry (Sri Lanka)

Another Skiz Fernando video that I would like to share with my readers, mainly because I love this dish! I did try the Skiz Fernando Recipe before I posted it here on my blog, and I must say thumbs up to you sir!

Eggplant, also known as Aubergine and Brinjal is a commonly found vegetable in Sri Lanka, and in most parts of asia. In Sri Lanka, Aubergine is made in many many different ways, mainly through deep frying. It is also a much loved dish by the masses.

Whats more is there are many varieties of Aubergine in Sri Lanka. Below is an image I found on flicker credit goes to the original photographer , this is probably the most commonly found variety in Sri Lanka.

Other than the above mentioned common type there are many more, most of the varieties found in this article can be found in Sri Lanka. I personally prefer the long purple ones, and the taste and texture differs from variety to variety, I have tried most available varieties, and I do recommend you try them too while you are there!
